About

Sapparos is the traditional Thai restaurant of chef Sitrong Walasura Na Lampang, winner of MasterChef Thailand season 6 in 2023, who Bangkok Biz News says worked in law before turning to palace-recipe research and fruit carving. The first branch is on Sukhumvit 20; the second opened in the NEXTOPIA zone on the 5th floor of Siam Paragon. The reason to come is khao chae, the rice-in-jasmine-water dish of the hot season. Khaosod reports the kitchen makes up to 30 side dishes where a typical fine-dining set stops at 15 or 16, some of them started months ahead: moo ta thua from the Bang Khun Phrom palace recipe, triangular preserved radish from Wang Worawan and kung mai phat from the Mae Khrua Hua Pak cookbook. The water is scented with jasmine, chommanad, rose and ylang-ylang. The Paragon set is 'khao chae like khao khwan', nine side dishes arranged as a bai sri offering, 890 baht at launch against a regular 1,590, served at 11:00, 13:00 and 15:00 in limited numbers, booking required via LINE @sapparos or 095-582-6669.
